The discovery of the Bulgarian scientists from the Institute of Cryobiology and Food Technologies the education of the participants in the world exhibition AGRA 2013. This year the exhibition presented more than 62 innovations and discoveries, of which 17 are global and 7 European.
Bulgarian scientists caught the attention of the other participants with the presentation of healthy meatballs and kebabs with oat and wheat bran.
The innovation, which is expected to become a fact in 2014, is the work of Dr. Dora Bakalivanova from the Institute of Cryobiology and Food Technology.
The basis of the beneficial effect of the meatballs and kebabs developed by Dr. Bakalivanova is the enrichment of minced meat with fiber and in particular with oat and wheat bran.

In the new development of Dr. Bakalivanova and Assoc. Prof. Mihalkova, the artificial antioxidants that preserve the freshness of meat products have been replaced by natural antioxidants such as rosemary.
Only 4.5 grams of rosemary per kilogram of raw product are enough to preserve its freshness. By comparison, the most widely used artificial antioxidant is Super Frisch, which is composed of sodium acetate, E262, E330 and E301.
