Sprat is a sea fish, widespread in Europe, in Bulgaria as well. In Bulgaria it is known as sparrow, sprat, Black Sea sprat or just sprat. It can be salted, frozen, canned and marinated.

If you want to make homemade marinated sprats, see the following two recipes. The first takes longer and the second cooks faster.

Necessary products: 1 kg of raw sprats, 500 ml of oil, 500 ml of vinegar, salt, bay leaf and 2 onions.

Preparation: Wash and clean the sprats well. Put them in a suitable saucepan and add plenty of salt. Put the pot in the refrigerator and let it stand for 24 hours. The next day, remove the sprats and wash them well. Fill them with water and leave for another hour.

Then take them out, drain them from the water and pour vinegar over them. Sprats should be well covered with vinegar. The vinegar-soaked fish is left to stand for one hour. Then remove the sprats and drain.

Put them back in the empty pot, put sliced onions, bay leaf and pour oil so that you cover the fish. Refrigerate and consume after about 4-5 days.

Second proposal for marinating sprats.

Cut the onion into circles and arrange part of it on the bottom of a suitable saucepan. Put a layer of fish on top, arrange onions on it again, then fish again and so on until the pot is full. Add bay leaf, pepper and salt.

Make a mixture with oil and diluted one by one vinegar with water. It is good to know that for one kilogram of fish you need ½ tsp. oil and vinegar. Pour the mixture into the pot with the fish and cover. Boil for an hour and a half to two hours.

Marinated sprats are a great appetizer for vodka and brandy. Can be used as an ingredient in various salads.
