Before spreading it in the trays is placed with cellophane or paper smeared with a little oil or olive oil. The fruit mass can be dried in the sun or in an oven heated to 80 degrees.

When a crust forms on the surface, drying must be completed. The pestle is then turned over and dried on the other side until it stops sticking to the fingers.
