A new ordinance on the requirements for accommodation and catering establishments is about to ban the supply of tripe soup in local pubs.
The favorite Bulgarian soup can be eaten only in restaurants and snack bars. They will be set aside as places where soups and offal dishes can be served.
Pubs, taverns and restaurants, which focus more on alcohol consumption than food, in addition to alcoholic beverages, will be able to offer soft drinks, salads, cold appetizers, salads, nuts and pastries.
For restaurants, categorization of the type of classic, national, specialized, thematic and pizzerias will be introduced. Profiling according to the category of stars will be introduced, similar to the hotels - 2 stars, 3 stars, 4 stars and 5 stars.
This categorization will be determined on the basis of the service in the respective establishment. In the 5 and 4 star restaurants, an order of cold appetizers, salads and aperitifs should be served within 10 minutes.
In 3 and 2-star restaurants, the order must be served within 15 minutes. The ordinance obliges the waiter to warn how much the respective dish will be delayed when ordering more complex dishes.
For all categories and types of sites will be required to open bottled beverages - water, soft drinks, wine and beer, before the eyes of customers when serving them.
The categorization will take into account the education, professional and language qualifications of the service staff.
Once the Ordinance is voted on and approved, restaurants and all types of restaurants will have 6 months to put the requirements into practice.
All new sites that will be put into operation after the date of its promulgation will be categorized according to the new requirements.
The expected results from the adoption of the ordinance are the creation of clear rules for work by hoteliers and restaurateurs and their offer of high quality tourist services, according to the Ministry of Tourism.
