Gnocchi are traditional dumplings for Italian cuisine. The literal translation of gnocchi from Italian means lump. These small delicacies are most often made from potatoes, flour, fruit puree, cheese or polenta.
There are different ways of serving them that resemble that of pasta - with sauce, butter with sage or parmesan. Here are some quick and delicious gnocchi recipes to make at home.
Gnocchi with cream sauce
Necessary products: 1 kg of potatoes, 100 g of Parmesan or yellow cheese, 1 egg, 1-2 tsp. flour, ½ tsp. butter, 2 cubes of mushroom broth.
For the sauce: 250 g mushrooms, 1 onion, 1 tsp. olive oil, 1 clove garlic, 200 ml cream, 1 tsp garden spices.
Preparation: Wash the potatoes well. Pour cold water and bring to a boil. When they are ready, the water is poured. Allow the potatoes to cool. Peel a squash, grate it and squeeze the juice. Then rub through a sieve to obtain a crumbly mixture.
Knead the eggs, potatoes, half of the grated cheese and flour. The resulting dough is divided into 3 parts. Each of them is formed into a long wick with a thickness of 2 cm. The wick is cut into medium-sized pieces. Each is made into a ball and flattened with a fork.
The mushroom broth is dissolved in 500 ml of boiling water. The gnocchi are put in it in parts. Each of them is boiled for 2 minutes. They float to the surface when they are ready.
Stew the onion in olive oil, add the garlic, after 1 minute add the chopped mushrooms. When stewed, add the cream. Season the sauce with the selected spices.
Gnocchi are served flights with sauce. The top can be sprinkled with grated Parmesan or yellow cheese.
Ready gnocchi with smoked yellow cheese
Necessary products: 400 g ready-made potato gnocchi, 150 g canned, peeled and sliced tomatoes, 60 g smoked mozzarella, 50 ml cooking cream, 4 basil leaves, 2 tbsp. olive oil, 1 onion, 2 tbsp. water, salt, ground black pepper.
Preparation: Onions, peeled and chopped, stew in olive oil until golden. Add another 2 tbsp. water and simmer for another 2 minutes. Then add the tomatoes and stir the mixture.
Season with salt and pepper and simmer for about 10 minutes. Sprinkle with washed and finely chopped basil on top. Last add the cooking cream. Allow to simmer, then remove from the heat and set aside for 10 minutes.
The finished gnocchi are boiled in boiling salted water until they surface, for about 4-5 minutes each. Drain well from the water and place in a fireproof pan. Pour the prepared sauce on top. Sprinkle with diced smoked mozzarella.
Bake the gnocchi in a preheated oven at 200 C for 10 minutes, until baked. Serve hot.
Gnocchi with tomato sauce
Necessary products: 400 g ready-made potato gnocchi, 750 g tomatoes, fresh sage (sage), 1 onion, 3 tbsp. butter, salt, pepper, 50 g grated Parmesan cheese.
Preparation: Blanch the tomatoes in boiling water for 1 minute. Peel a squash, grate it and cut it into small cubes. Onions, peeled and chopped, are stewed. When ready, add the tomatoes. Boil until the sauce thickens.
Fry the finished gnocchi in a little melted butter with a little sage for about a minute. Arrange on a plate and sprinkle with hot tomato sauce. Serve sprinkled with grated Parmesan cheese.
