Most people think that once the food tastes good, it will definitely lead to obesity. Good taste determines what we choose to eat, but not how much we eat in the long run, says the head of the research team - Michael Tordoff.
Researchers have developed a series of experiments to assess the role of taste in gaining weight. In the first stage of their research, they experimented with mice. Scientists have found that laboratory rodents strongly like food with added sweet or buttery flavors.
They gave them two glasses of food. One group of mice had a choice between a glass of regular rodent food and a glass of food mixed with the caloric sweetener sucralose. Another group was given a choice between a cup of plain food and a cup of food mixed with butter, which also contains a lot of calories.
The mice did not pay attention to ordinary food and ate exclusively spiced food. However, the scientists did not allow them to overeat, but provided them with the daily necessary amount for life.
In the second phase of the study, three new groups of mice were fed for six weeks, respectively, a regular food, such as sucralose and one containing oil. After the test period, regardless of their diet, the rodents in all three groups had not changed their weight. Currently, scientists have included in their study people who have undergone this type of diet.
People say that if a food tastes good, it can't help but be harmful, but our findings show that this is not true. Our efforts will continue to create foods that are delicious and very healthy, says Tordoff.
