According to many studies the eggs, among many other beneficial substances they contain, are also a good antioxidant. What are antioxidants? These are chemicals that prevent the oxidation of other chemicals and absorb a very small percentage of the radiation from the environment.

In every biological system, metabolic processes are constantly taking place and free radicals are released. Free radicals are the particles with the most aggressive behavior towards molecules and cells and their structures in the body. In this way they lose their activity, but not without consequences for the body.

The human body has a variety of ways to deal with free radicals. In each cell there are substances called antioxidantsthat eliminate free radicals fast enough before they harm the body. Free radical control systems need to work effectively and therefore need the substances we take with fruits and vegetables - these are mostly vitamins.

Which substances with antioxidant action are contained in eggs?

Proven antioxidant action have:

- Retinol (vitamin A or beta carotene) - serves to protect plants from damage caused by radiation from the sun. It is assumed that it does the same for humans;

- Vitamin C (ascorbic acid, E300) - water-soluble vitamin;

- Vitamin E - fat-soluble vitamin, which is responsible for lipids;

- Selenium - a chemical element without which the body will be seriously ill.

The eggs are a source of proteins, lipids and minerals and of the amino acids tryptophan and tyrosine, which are antioxidant properties. The yolk contains melatonin, which is important for the rejuvenation of the body and participates in the creation of new cells. It also contains choline, which regulates metabolism.

Lutein is also found in the yolk, which is necessary for good vision. According to research the eggs can prevent cardiovascular disease and cancer. Eggs are also a source of calcium, vitamin A, B1, B12, D, E, potassium and other vitamins. For this reason, eggs are considered the best antioxidant among foods.

It should be noted that in the case of fried or boiled eggs, the amount of these substances is reduced by half.
