We are used to we change the taste of food with the help of various spices or food additives. We also know which ingredient affects the basic taste and how we have learned to change it beyond recognition by combining different ingredients. This is thanks to the art of cooking.
However, there are other ways to change the food that sound rather strange. These are unexpected things like the shape and color of the package, the size of the dishes and even the music that sounds during the meal.
In a physiological experiment by scientists from Brussels and Oxford a few years ago, participants, about 300 in number, were asked to try different types of beer. The drink had a different alcohol content - 4, 5; 6 and 8 degrees.
Each volunteer was asked to try each of the drinks twice and to evaluate the taste of the beer. Participants did not know that they had drank the same kind of amber liquid both times. In the end, everyone was convinced that they had drunk a different drink.
The reason for the delusion turned out to be the fact that the beer was offered accompanied by a different one music. That changed hers taste qualities. Participants in the experiment described it as more sour, bitter, or even stronger than it actually was.
The candy test showed similar results. Volunteers were offered caramels, but depending on the music they played as they ate them, people identified them with different tastes. The low musical tones gave the candies a bitter taste, and the high ones - sweet, despite the fact that they were the same sweet temptations.
Scientists believe that the brain has a different plasticity and our consciousness is constantly trying to insure itself against different feelings and this is at the expense of others.
Physiologists explain it in even more detail with the volume. The strong act on that part of the nerve that is responsible for transmitting information to receptors in the tongue. Things are completely mechanized, but we don't realize it.
