With a delicate taste, light, refreshingly filling zucchini can be a great food during the spring-summer days. Their storage is similar to that of cucumbers and it is good to keep them in the refrigerator until they are cooked. Preserving them for a longer period of time requires careful handling.

To enjoy their ethereal texture in soups, for example, and in winter, we must freeze them, following a few simple rules.

First, we take a few zucchini. We wash them carefully. We remove the edges, but do not peel them to preserve the shape of the zucchini during freezing and thawing.

Cut them lengthwise or into thicker circular pieces. Processed in this way, we leave them to stand for a while. Then lightly wrap the pieces of zucchini with kitchen paper and gently absorb as much of the water they have released.

When we absorb the excess liquid, we put them in a plastic bag, the most suitable being the hard bag with a zipper. It is good to watch whether the individual pieces slide and gather only at one end of the envelope or are accumulated in one direction. We need to spread the zucchini pieces all over the inside of the plastic bag.

When we are done with this preparation, the zucchini are ready to freeze. When thawing, they should be left at room temperature to avoid flaking.

We can also cut our favorite vegetables into cubes, but then when thawed the zucchini is more likely to be even more shapeless and crunchy in the dish. It is generally believed that zucchini frozen and stored for the winter cannot be used for frying.

Therefore, it is better to freeze already fried zucchini. First, we need to wash them well and dry them. Then cut into larger circles with preserved peel at their ends. Lightly fry them, then leave them to cool, soak up the excess liquid and fat with kitchen paper and carefully place them in a storage bag in the freezer.

When thawed, they should be seasoned with more spices to enhance their flavor.

Whichever option we choose for storage, it is good to be guided by the fact that zucchini is a vegetable with a high water content and it is good to extract the maximum liquid before freezing. Therefore, it is advisable to always keep the peel, which holds the integrity of the zucchini and use the zucchini pieces in the preparation of dishes, where it will be processed and cooked well enough.
