- Almost all sausages should be stored at a temperature of - 1 to + 5 degrees Celsius. Only then will the suitability marked on their packaging be valid;

- When storing durable dried smoked or cooked smoked sausages, we must keep in mind that their shelf life is valid only if stored at a temperature of 0 to 4 degrees Celsius. For almost all types of sausages stored in this way, the shelf life is about 2 months, and if they are vacuumed - up to 3 months;

- Not only the type of meat and the technique of its processing are important for the suitability of the sausages, but also the way it is packaged. For example, short-lived sausages, such as vacuum-packed beers, can withstand the recommended storage temperature for 30 days, while if packed in a vacuum bag in a gaseous medium, their shelf life is not more than 25 days;

- Raw-dried sausages and durable cooked-smoked sausages should be stored at a higher temperature, usually 2 to 10 degrees Celsius. Examples of such sausages are pastrami and sausage and all their variations. They can be prepared from meat of different composition and their suitability depends on whether they are sold in bulk or vacuumed. Such meat delicacies last about 60 days, and the vacuum sausages can be stored for up to 90 days;

- As a rule, cooked-smoked sausages, which are not explicitly marked as durable sausages, last about 30 days at a temperature of -1 to + 5 degrees. Most of them are packed in thermofoil, not in vacuum packs;

- Rolls, as well as bacon salami, which belong to the group of raw dried sausages, are stored at temperatures from 0 to 4 degrees Celsius and have a shelf life of up to 60 days, and sausages - up to 90 days;

- The shelf life of sausages is very relative, but you should keep in mind that real sausages, which are in a natural shell and are not full of preservatives, rarely last more than 7 days.
