Pickles, mixing different vegetables, and sterilized vegetables of one kind diversify and enrich the table.

Very popular product for sterilization are cucumbers. Not all varieties are suitable for jars. Gherkins or young cucumbers of the Gergana variety are needed. They retain their crunchy nature throughout the winter.

There are various recipes for pickles, and for their preparation in some of them the product is marinated. Regardless of the recipe, this sterilization is successful, which preserves the qualities of the vegetables even after processing.

Here is one recipe for sun cucumbers, which is quite old and is liked by lovers of small cucumbers.

Necessary products for sun cucumbers are fresh gherkins or young cucumbers Gergana, sea salt, green or unripe grapes, cherry leaves, fennel flowers, horseradish pieces and water.

Cucumbers are washed and soaked in cold water, where they should stay for about 5 hours. Remove the tops, and if the vegetables are larger, cut them into pieces to fit in the jar.

Each cucumber is pierced with a thick needle in several places and the pieces are arranged in the jar in a certain order. 2-3 cherry leaves are placed on the bottom. Arrange the cucumbers so that they fill the space tightly. Between them put sprigs of fresh dill, 5-6 pieces of horseradish, 5-6 grapes of unripe grapes. The jar is finished with cherry leaves.

Cucumbers are best styled in one-liter jars. For them, the best ratio is 1 tablespoon of sea salt. Pour the jar with fresh water to cover the cucumbers.

The jars are left in the light, but not in direct sunlight for about 5 days. The first 3 days are shaken. Initially, the brine is cloudy, but after a week it clears up. The sediment falls to the bottom.

The perfect sun cucumbers should be kept at a constant temperature, cool and dark.
