If you still find larger ones, experts suggest not to cut them with a knife, but carefully tear them into two - three pieces - otherwise you will lose the freshness of green leafy vegetables.
Arugula salads are varied - can be served in combination with a variety of products, such as capers, pine nuts and more.

Greek salad with arugula
In Greece, there are big fans of green salads, so we have chosen a recipe that includes not only arugula, but also other green leafy vegetables.
Mix in a bowl 1 tsp. spinach and arugula leaves, and to them add chopped lettuce leaves. Then stir and put the kiwi, which you cut into smaller pieces. Finally, add finely chopped (maybe sliced) red onion.
The dressing is made with 1 tbsp. mustard and balsamic vinegar, as well as 4 tbsp. olive oil and orange juice. Mix all this well and add a teaspoon of honey and a little salt to the mixture.
For the Greek salad you will also need halloumi cheese, which you must first grill on a grill pan. Put the cheese on the vegetables and pour over the dressing. If you like hazelnuts, roast them in a dry pan and sprinkle the salad with them.
Spanish salad with arugula and blueberry sauce

Necessary products: 2 tsp arugula, 2 tsp. spinach, 1 tsp. nuts, ¼ tsp. valdeon (maybe goat cheese), 2 (tsp. blueberries, olive oil, 2 tbsp. white wine vinegar, salt
Method of preparation: First, you need to grind 2 tbsp. of blueberries with olive oil and vinegar. After the food processor chops them finely, set the mixture aside for half an hour.
Meanwhile, pour the spinach and arugula in a bowl, add the remaining ingredients - finely chopped walnuts, cheese in small pieces, and the rest of the blueberries. Finally, pour the salad with the dressing.
Moroccan salad with arugula
If these suggestions are not exotic enough for your taste, try a salad with arugula with a Moroccan flavor - you need red beets to bake. Once soft, peel it and cut it into quarters.
Put in a plate of it, add the arugula and pour a dressing of several highly fragrant spices. For it you need cumin and coriander (¼ teaspoon) hot red pepper and salt to taste, 1 tbsp. white wine vinegar and 2 tbsp. Orange juice. Finally, add olive oil and pour over the salad.
