If you have been to Greece but have not tried souvlaki - then you have not been able to touch the most traditional recipe of Greek cuisine. There is no celebration or gathering without this dish on the table.
What exactly is it? This is a Greek skewer, which in the simplest traditional version consists only of pieces of meat arranged on a wooden or metal skewer. However, the varieties of souvlaki with vegetables between the meat are no less tasty and appetizing.
What exactly kind of souvlaki - with or without vegetables, you will cook, depending on your taste. It is good if you decide to stick to Greek traditions, to use pork.
Choose fragile pieces from the top of the front thigh. It is possible to use chicken or lamb, but remember - real souvlaki are made of pork. Cut into pieces - medium in size and in the form of cubes.
Season with salt, olive oil, pepper, oregano and arrange the meat pieces on the skewers. If you have chosen to add vegetables to your souvlaki, alternate a piece of meat with a piece of vegetable. Chopped peppers and onions are most often used for this purpose in Greece, and sometimes tomatoes and zucchini.
There are two options - to immediately put the skewer to bake or soak it overnight in the marinade. In the first case, you will enjoy only the taste and aroma of meat and spices.
In the second case, you will get more tender skewers, enriched with the ingredients of the marinade. If you don't know what to choose, just try both.
In case you decide to marinate your skewers of souvlaki, make the marinade from olive oil, lemon, garlic, onion, oregano, salt, pepper, white wine, rosemary, thyme. These are the most suitable components of a marinade for souvlaki. If you don't like any of the ingredients, just don't add it. It is good for the meat to be soaked for at least a few hours, and preferably overnight.
The final moment in the preparation of souvlaki is baking. Not only is it not unimportant how it will happen, but it is extremely important. The best choice is to roast the skewers on charcoal. The taste is unique.
Also an excellent option are all types of barbecues. The most unsuitable is the electric grill or pan. Better not choose these options if you want to get traditional Greek taste of souvlaki.
