Spices are something that no dish can do without. They give taste, aroma and excite the appetite. A good solution during the summer months, when we have all kinds of vegetables and spices, is to prepare universal vegetable spices to use during the winter months. This is how:
Vegetable seasoning
Necessary spices: 1 bunch parsley, 1 bunch celery, 1 bunch dill, 1 onion, 1 garlic clove, ½ or 1 leek stalk, 4-5 medium carrots, 3-4 green peppers, 3-4 red peppers, 1 celery head, 2 parsnips, 250 -300 g of salt
Method of preparation: All vegetables and spices are finely chopped. They are not digested as they will be lost in the food. The products are mixed together with the salt. Mix very well.
Pre-prepared jars are filled with the result. They are pressed well. The jars close. They are not welded. They are edible until next summer. Store in a dry and cool place and in a freezer.
Canned vegetable seasoning
Necessary products: 500 g carrots, 500 g peppers, 500 g red tomatoes, 1 head of celery with leaves, 3 bunches of parsley, salt
Method of preparation: All products are ground in a meat grinder. The result is poured into jars and sterilized for 10 minutes. The spice is used to season all kinds of dishes and soups.
Parsley spice
Necessary products: 4 tsp chopped parsley, 1 tsp. sol
Method of preparation: The parsley is washed and finely chopped. Put in a plastic box and sprinkle with salt. Mix well and return to the freezer. In this way the spice retains its taste, aroma and color and can be used as fresh at any time.
Frozen vegetable mix
Necessary products: 2 onions, 2 carrots, 2 green and red peppers, 2 zucchini, optionally - parsley, dill or celery
Method of preparation: Onions, carrots and zucchini are cleaned and finely chopped. Carrots are cleaned and grated. Parsley, dill or celery are washed and soaked.
All products are mixed. The whole amount is distributed in small doses in separate bags. Store in the freezer. When used, they are poured directly into boiling water or into the dish without thawing in water beforehand. In this way the vitamins are preserved to the maximum.
