Necessary products for the marinade: 2 liters of water, 500 ml of wine, 250 ml of vinegar, 1 carrot, 1 onion, 2 bay leaves, 20 grains of black pepper, 1 tsp salt, 2 cloves.
Carrots and onions are cut into large pieces and all products are mixed. You can add a few unpeeled garlic cloves and a few grains of allspice. This marinade may be cold, but it is best to boil it for about 10 minutes and after it cools completely, dip the game in it.
It is good to soak in a glass container and if the meat is not well covered, turn from time to time to absorb the sauce on all sides. After standing for about 1 day it is ready to be seasoned with whatever spices you want.
