Undoubtedly the most sophisticated and widespread hors d'oeuvre in Spain tapas. It is extremely easy to prepare and is becoming increasingly popular outside the country. Apart from being a hors d'oeuvre, tapas can be served as a side dish or as an exquisite dish.

There are more and more thematic establishments that specialize entirely in the preparation of tapas. Elite restaurants, even in our country, include the Spanish appetizer in their menu.

The name "tapas" comes from the Spanish verb for cover. Sources claim that the first tapas were slices of bread or meat with which sherry lovers in Andalusian taverns covered their cups to prevent fruit flies from crawling. Usually the meat was ham or chorizo, ie. one that evokes a feeling of thirst.

As a result, many bartenders and restaurateurs began to invent a variety of snacks and hors d'oeuvres to serve with sherry, and thus increased their sales of alcohol. Tapas are believed to have been invented by the Spaniards to keep the conversation going at the table.

For 4 servings

Necessary products: 3 tbsp. olive oil, 1 old onion, 3 potatoes, 2 old garlic cloves, 2 red peppers, 6 eggs, 1/2 tsp. red pepper, 1 bunch fresh parsley

Method of preparation: The oven is preheated to 180 C with a fan or 200 C, depending on its power.

2 tbsp. olive oil is heated in a pan. Peel and slice the onions and potatoes and fry at a moderate temperature for about 20 minutes - until the potatoes are soft. Gradually add the peeled and finely chopped garlic and peppers during the last 5 minutes of sautéing.

Transfer the mixture to a large bowl, season to taste and allow to cool. Add the eggs, hot red pepper and parsley and let stand for another 5 minutes.

Place a thin-walled pan in the oven to warm for a few minutes. Remove and grease, then pour the egg mixture into it and bake for 15-20 minutes until firm. When ready, remove, cool and cut into squares. Served with selected Spanish wine.

Necessary products: 3 ripe avocados, 2 small tomatoes, 1 small onion, finely chopped or grated, 1 clove garlic, pressed, 1 red hot pepper, finely chopped, without seeds, 2 tbsp. parsley, finely chopped, 2 tbsp. lemon juice, 2 packets of 200 g of ready tortillas or chips, salt to taste

Method of preparation: Peel an avocado and mash it with a fork. Peel a squash, grate it and cut it into small cubes. Mix avocado, tomatoes, onions, garlic, peppers, parsley well and season with lemon juice and salt to taste. The finished guacamole is served sprinkled with tortillas or chips.
