If you have decided to cook bean soup, then you need to soak it in advance, ideally for 6-8 hours. Fill the already soaked beans with water in a ratio of 1 liter of water per 300 g of beans. Add bay leaf, black pepper and simmer until beans are soft.
Meanwhile, prepare your vegetables. Peel and finely chop the potatoes and other vegetables. If you want the soup to be more spicy, you have to crush the garlic, if not - just chop finely.
Once all the vegetables are chopped, they should be stewed for 5-10 minutes. The main thing is to remember to stir from time to time. Add your favorite spices and salt. Add the stewed vegetables to the prepared beans. Pour the pre-prepared vegetable broth and a little lemon juice. Cook over low heat until the beans are fully cooked.
