Cream soup of ripe beans
Ingredients: 1 large cup beans, 2 tablespoons oil, 1 onion, 1 clove garlic, 4 cups vegetable broth, 3 tablespoons milk, 1 teaspoon flour, salt and mint to taste.
Method of preparation: The beans are soaked from the previous evening in water. Boil, discarding the first two waters. Add the finely chopped onion and garlic.
Once everything is ready, the beans and vegetables are rubbed through a sieve and the broth is added to the resulting mixture. Add the flour, which is diluted with a little water to thicken the soup. Allow to simmer on low heat for about 7-8 minutes and finally season with spices.
Spicy lean soup from ripe beans
Ingredients: 1 large cup beans, 1 onion, 1 hot dried red pepper, mint, parsley, vinegar and salt to taste.
Method of preparation: The beans are soaked in water from the previous evening. Once it boils, the first two waters are discarded.
When the beans soften, add the finely chopped onion and the sliced pepper. Allow to simmer over low heat. When the beans are ready, season with the listed spices, sprinkling parsley on top.
Bob soup with smoked stew
Ingredients: 1 large cup beans, 1 onion, 1 carrot, half green and half red pepper, 2 grated tomatoes, 1 piece ragout, 3 tablespoons butter, salt, mint and savory to taste.
Preparation: The beans are put to soak from the previous evening. Bring to the boil and discard the first two waters. The whole piece of ragout is added to give off the aroma of smoked meat. Once the beans are soft enough, add the finely chopped onions, peppers and carrots.
The ragout is removed, deboned and returned to the soup. Wait for all products to be ready, add the tomatoes, butter and all other spices.
Allow the soup to boil for another 5 minutes and it is ready to be served. If desired, you can sprinkle it with a little chopped parsley.
