The favorite dessert of all the ladies, melbata, was invented especially in honor of the opera singer.
The dessert was created in 1892 by the French chef Auguste Escoffier, who worked at the Savoy Hotel in London.
The master of culinary delicacy dedicates it to the Australian soprano Nelly Melba (1861-1931).
The dessert contains a combination of two magnificent summer fruits - peaches and raspberries, with which vanilla ice cream is decorated.
In 1892, Nelly Melba appeared on the stage of Covent Garden in the popular opera by Wagner Lohengrin.
The Duke of Orléans gave dinner to celebrate her triumph. Especially for the occasion, chef Escoffier created a new dessert.
To show it properly, he made an ice sculpture of a swan. The swan carried peaches on his back, which were dipped in vanilla ice cream and decorated with sugar.
Escophia also made a new version of the dessert shortly after taking it. For the opening of the Carlton Hotel, where he was a chef, he again made an ice swan and this time decorated the peaches with raspberry puree.
And so - melba was already part of the menu of restaurants, and over the years its versions have become many. They named the dessert melba, in the name of the singer, and today the options and various recipes for melba include apricots, strawberries, even jam or fruit syrup, which replaces the fruit.
