The recipe for a delicious fish with chestnuts, which can become a Christmas surprise for those who do not like meat, was created by a French chef more than a century ago.
You need a trout or salmon fillet - four pieces, one hundred grams of butter, one tea cup of cream, one hundred grams of grated yellow cheese or parmesan, four hundred grams of chestnuts, one teaspoon of black pepper, salt to taste.
The fish is cut into pieces. The dish is made in individual pots. At the bottom of each pot put a piece of butter and a tablespoon of cream.
Arrange the pieces of fish, sprinkle with pepper, salt and grated cheese or Parmesan. Pre-cooked and peeled chestnuts are placed on top.
Fill the pots with a mixture of melted butter, cream, some breadcrumbs and grated yellow cheese or Parmesan. Pour three tablespoons of hot water into each pot.
Cover the pots with a lid or cover them with an elastic dough of flour and water, spread egg on top and sprinkle with grated cheese. Bake in a medium oven until done.
Fish in ham is prepared with four pieces of salmon or trout fillet, four pieces of ham, two tablespoons of olive oil, two hundred milliliters of yogurt, juice and grated rind of one lemon, four green onions, spices to taste.
Preheat oven to two hundred degrees. Wrap the fillets in ham, leaving part of the fish uncovered. Sprinkle with grease and place in the oven.
Bake for twenty minutes until the fish is ready and the ham is crispy. Cut into large pieces. Meanwhile, prepare the sauce by mixing the yogurt with the grated lemon zest and green onions.
Serve the pieces of fish wrapped in ham, topped with yogurt sauce. The dish is delicious even when it is completely cold. Served with toasted slices.
