Method of preparation: Heat 2/3 cup water and 1 cup sugar in a small saucepan. Add 1/2 cup of anko and mix well. Cool the filling. Make 12 small anco balls and set aside.

Put the rice flour in a heat-resistant bowl. Mix the water and sugar in a small bowl and gradually pour in the flour, stirring constantly.

Place the bowl in the microwave and heat the dough for about two minutes. Then mix it well. Then heat it again until the dough rises.

Stir it quickly. Dip your hands in the starch and pour into a pan. Then with your hands, being careful because it is hot, move the dough into the pan.

Make 12 flat meatballs out of it. Put an anco in each piece and wrap it. Daifuku is ready!
