Mizu Yokan is a traditional Japanese dessert. Yokan is a general term that refers to this jelly-like dessert made from red beans, agar and sugar. Azuki red beans are in the form of tsubuan (smooth red bean paste) or koshian (coarse red bean paste).

Yokan is usually formed into a long rectangular block, which is then cut before serving. Mizu yokan is a type of yokan that has a higher water content than the traditional yokan. It is often chilled and served during the hot summer months and is quite a refreshing dessert. There are several types of flavors of this dessert.

Examples of additional ingredients include foods such as chopped chestnuts, sweet potatoes and fruits. Another popular flavor is that of green tea. Use pre-made bean paste, and finally be sure to serve the dessert chilled.

What you need: 2 tablespoons agar agar; water for soaking agar agar; 1 and 1/4 cup water; 1 cup brown sugar; 1 and 1/2 cup red bean paste.

How to do it: Prepare the gelatin (agar agar) mixture by soaking it in water. Then remove the agar agar from the water and squeeze to remove excess water. In a medium saucepan, add the gelatin with 1 1/4 cups of water and heat them, stirring constantly.

Then reduce the heat to low and simmer until the agar is completely dissolved. Be sure to stir all the time. Add the pre-made sweet red bean paste. Stir constantly, making sure the bean paste is diluted in agar agar and water.

Bring to a simmer until thickened. Pour the mixture into a shallow rectangular plastic container. Allow to cool to room temperature and then store in the refrigerator. Mizu yokan should become firm. Cut into small blocks and serve chilled.
