One of the most famous apple drinks is cider - a primary product of apple processing, the result of fermentation of apple juice.
Against the background of grape wines, the cider looks downright non-alcoholic. That's why it is often called a women's drink, although men love it too. There is dry cider with an alcohol content of 6%, medium - with 4% and sweet with 2%.
No one knows when and where they first started drinking cider. There is a version that, as always, there are monks involved, a class to which we are indebted for many remarkable discoveries in the gastronomic field.
It was they who invented calvados. Its production is elaborated and brutally regulated. The crop is harvested from September to December. First, the best fruits of special varieties with different taste characteristics are collected - sweet, sour, bitter, then mixed in a certain proportion.
The apples are pressed, the resulting substance after filtration is poured into oak barrels, where the fermentation takes place. After a month you get a cider - 4-6%. After the double distillation and the necessary stay in oak barrels, real calvados is released, which is usually filled in bottles with a special shape.
The most famous brands are Boulard, Busnel, Coquerel.
Depending on the maturity of the label, 3 asterisks can be seen, which mean not less than 2 years of maturity, the term Vieux - not less than 3 years, VSOP - not less than 4 years, Extra or Napoleon - 6 years and more.
After bottling, the aging process of calvados stops, so there is little point in preserving it.
As a rule, calvados is drunk after eating. There are also lovers who turn the cup before eating for appetite or during the meal itself.
Apple drinks are used to make excellent cocktails. Gin or sherry go well with cider. Calvados goes with Cointreau, dry champagne or tonic.
Calvados is very popular among cooks. They appreciate its aroma and add it to various dishes. With it they stew goose meat, fry fish, prepare sweet and sour sauces and desserts. Young calvados is more suitable for culinary purposes - it has a more pronounced apple aroma.
