Juniper or as it is also called Chinese date, is one of the most useful fruits, but few in our country are familiar with this useful gift of nature. Juniper can be dried and thus its useful properties are enhanced.

Juniper can not stay fresh for long. The fruit must be dried so that it can be stored and consumed for a longer period of time.

The drying of jujube is very similar to the drying of dates and it is not surprising that it is called Chinese date.

Once the jujube is dried, it visually resembles dates and can be both eaten and cooked.

Harvested jujube should be washed before drying. Bruised fruits, as well as those with twigs and leaves, cannot be dried.

The first step is to boil the jujube in a water bath. Pour water into a large and deep saucepan and place a smaller one on it, in which the jujube will be.

Once you have selected the fruit to be dried, you need to put it in the smaller pot and cover it with water - you only need to cover the fruit with water and not fill the pot with liquid.

Cover the smaller pot with fruit and place it in the water bath. Bring the water from the deep pot to a boil. This takes about 20 minutes.

Once the water boils, inspect the fruit for softness and, if so, remove the lid and sprinkle the jujube with half a cup of sugar. Gently stir in the fruit and sugar until the sugar is completely melted.

Remove the jujube from the hot plate and leave it to cool.

Once the fruit has cooled, it is best to dry it in a dehydrator at a temperature of 60 degrees Celsius. The prices of the device on our market are different, but they start from about BGN 50. And the safest drying is done with it.

If you do not have this appliance, however, you can try to complete the drying process in the oven by arranging the fruit in a tray in the form of a grid, being careful so that they do not touch each other.

Set the oven to 60 degrees and let the jujube dry.

In a dehydrator, the fruits need 24 hours to dry completely.

Store dried fruits in bags at room temperature. Their shelf life is 1 year.
