This is mainly due to the conquistadors, who put an end not only to the special rituals that the Aztecs performed with amaranth, but also tried to draw the line on the culture itself. In several remote areas of Mexico and in the Andes, its cultivation continued.

Amaranth is a popular food in many countries today. In our country, the culinary tradition is not so ingrained and is better known as a variety of steak.

Amaranth recipes are probably the most numerous compared to other plants. For example, in Mexico it is used to make popcorn, which is then mixed with sugar syrup and thus becomes a sweet temptation called "allergy" - "happiness".

Ground and roasted amaranth seeds are also added to the traditional atole drink. In Peru, on the other hand, the amaranth drink is called giggling, much like beer. In addition, boiled or fried leaves of the plant are common in both countries.

Amaranth is also consumed in the East. In India, for example, it is present in almost every pastry. In Nepal, chapatis and all kinds of flour are made from it.

Making amaranth is extremely easy. For this purpose, the grain is soaked in water for 10-12 hours. Thus, its nutritional profile is perfectly preserved and becomes a great addition to muesli.

Amaranth popcorn is made like corn popcorn. In addition, the culture is recommended for feeding babies, and dried fruits, honey, nuts and others can be added to it.

Amaranth can be added to any soup. It is a suitable addition for all dishes with beans, lentils and vegetables.

Quite often, amaranth is used to make garnishes. For this purpose, it is cooked like rice, tolerating a combination with any products of your choice. For example, with one part brown rice and one part quinoa, you can cook half a part of amaranth, together with six parts of water.

Ingredients: 2 cups boiled amaranth, 1 cup apple juice, ½ a glass of raisins, ½ a glass of finely chopped almonds, 1.5 tsp vanilla, juice of half a lemon, grated rind of one lemon, 1 pinch of cinnamon.

Preparation: All ingredients are poured into a deep pan. Allow to boil under a closed lid. When this happens, reduce the heat and simmer for 15 minutes.

The finished pudding is poured into dessert bowls. Garnish with grapes or strawberries. Cool in the refrigerator and serve.
