In recent years, there is more and more talk about healthy eating and experts are remembering long-forgotten products that have been valued since ancient times. A typical example of this is amaranth. It is an ancient cereal that is very rich in fiber, calcium and iron.
Amaranth was known as a superfood because it gave people who consumed it a lot of energy and a feeling of satiety. It was especially used during wars by warring men, who, thanks to it, kept their strength for a longer time.
This cereal, unknown to us, has been known to mankind for 8,000 years, but with the advent of wheat it has long been forgotten. This is no longer the case. You can get amaranth in almost any major store and learn how to use it yourself.
In most cases, it is added to soups and broths and serves to thicken, but can also be pre-cooked and used to stuff various dishes. The possibilities offered by amaranth in cooking are innumerable and it is best to experiment on your own. Here are 2 of the most common amaranth recipes:
Spinach soup with amaranth
Necessary products: 2 handfuls of spinach, 1 onion, 1 clove of garlic, 10 g of oil, 50 g of amaranth, 1 egg, 40 g of yogurt
Method of preparation: The finely chopped onion is stewed with oil and water and amaranth are added to it. Once everything is soft, add the finely chopped garlic clove and chopped spinach. Finally, add the beaten egg with the yoghurt.
Tomatoes stuffed with amaranth
Necessary products: 10 medium-sized tomatoes, 2 tsp. pre-cooked amaranth, 3 tablespoons oil, salt, pepper and basil to taste, grated Parmesan.
Method of preparation: The tomatoes are washed, cut off the top and scraped off the inside. Fill with amaranth mixed with spices, cover with the tomato caps cut out of them and place in a greased pan to bake. Once ready, sprinkle with Parmesan cheese and can be served hot or cold.
