Sweet and sour soup from Thailand
Necessary products: 4-5 king prawns, 1-2 tbsp. fish sauce, 2 cubes of chicken broth, 1 hot pepper, 3-4 tbsp. oil, the white part of 2-3 sprigs of lemongrass, 4-5 lemon leaves, 7-8 sprigs of fresh coriander, 7-8 mushrooms, the juice of 1/2 lemon.
Method of preparation: Shrimp are thoroughly cleaned and their intestines are removed. The mushrooms are cleaned and cut into quarters. The hot pepper is cut into small pieces, the lemon grass is cut into circles, and the lemon leaves are grated. Their rough part is removed and broken.
Boil the chicken broth in water with a little oil. Add the lemongrass, mushrooms, lemon leaves, salt and coriander. Boil for 2-3 minutes, then add the fish sauce, shrimp and hot pepper.
Sweet and sour soup with onions
Necessary products: 100 g rice spaghetti, 4 onions, 2 tsp. brown sugar, 1 carrot, 50 g celery, 4 tbsp. rice vinegar, 1 cube vegetable broth, 1 bunch fresh parsley.
Method of preparation: Dissolve the vegetable broth in 1 liter of boiling water in a deep saucepan. Carrots and celery are cut into cubes, and onions - into large pieces lengthwise. Put the vegetables in boiling water. Season with 2 tsp. brown sugar, finely chopped parsley and rice spaghetti.
The soup is boiled for a few more minutes. Season with vinegar to taste and leave for another 5-6 minutes, then remove from heat.
Sweet and sour mushroom soup
Necessary products: 1 stalk of leek, 5-6 fresh mushrooms, 100 g of fresh cabbage, 4 rings of ginger, 1 clove of garlic, 2-3 cubes of vegetable broth, 1 tbsp. natural starch, 1 tbsp. sugar, white pepper to taste, 2 tbsp. vinegar, 2 tbsp. ketchup / 1-2 tsp. tomato puree, chili sauce / hot pepper to taste, 1 egg.
Method of preparation: The vegetable broth is dissolved in 1.5 liters of hot water. Cut the leeks into large pieces, the mushrooms into slices, and the garlic and ginger into small pieces. Put the vegetables in boiling water and cook over high heat for 5 minutes.
Dilute ketchup or tomato paste with 1-2 scoops of the soup and add to other products.
At the very end of cooking, add the cabbage, cut into strips. Boil for another minute and add the starch to the soup, diluted with a few spoons of cold water. Season with sugar, white pepper, vinegar and chili sauce - optional. For the crossed construction, beat the egg and add it to the soup, stirring constantly. The soup is served with chopped fresh onion.
