Cherries and sour cherries are one of the favorite fruits of each of us. Although they are seasonal fruits and are found in fresh condition in spring and early summer, it is not impossible to dry them.

Dried these delicious fruits are not inferior in taste to other fruits. You can add them to almost all your favorite pastries, desserts or just consume them.

So here are two suggestions on how to dry cherries and sour cherries at home.

First way. Remove the stones from one kilogram of cherries. Place the peeled fruit in a suitable container and add about a liter and a half of water and two cups of sugar. Put on the stove and wait for it to boil, let the cherries simmer for about 20 minutes. Then remove from the heat and squeeze the fruit out of the water.

You can spread them on kitchen paper to remove as much excess water as possible. Turn the oven to 50 degrees and place the already squeezed cherries or sour cherries in a suitable tray covered with baking paper.

Leave the fruit prepared in this way to dry in the oven for about 5 hours, not stirring them for the first three hours to keep the fruit whole. If your oven has a fan, you can turn it on to shorten the drying time.

Once the dried fruits have cooled, you can store them in a dry place in an airtight container. The juice from the fruits obtained during their cooking is a home-made fruit drink, which if it seems too sweet you can dilute with water before consumption.

The second way. If you do not have a fruit or herb dryer, you can use the oven again. To do this, remove the stones from the fruit and place in an oven at 50 degrees.

Allow the cherries or sour cherries to dry for about 8 hours. The difference with the first method of drying is that the dried fruits remain only with their natural sweetness, because no additional sugar is added to them.

After they are completely dry, the fruits acquire the appearance of raisins, and this is the way to find out that you have dried them correctly.
