The pumpkin is a traditional product for the Bulgarian table. This is especially true in autumn and winter, when we like to eat it in the form of different types of desserts. Apart from being tasty and fragrant, pumpkin is also very useful. It contains vitamins from groups B, C, E, K.

It is also a rich source of vitamin A, which acts as an antioxidant and protects the body from the harmful effects of free radicals. It contains trace elements such as potassium, calcium, magnesium, cobalt, sodium and iron. Pumpkin is low in calories and highly recommended in all diets. It is easily digested, which makes it suitable for consumption by older people.

In addition, pumpkin contains a lot of pectin, which cleanses the intestines and helps the body get rid of accumulated radionuclides.

There are dozens of types of edible pumpkins, each of which has its advantages and disadvantages. In Bulgaria the most common types are the common (chestnut), the pumpkin violin and the cooking zucchini.

Nutmeg, or as we used to call it in our latitudes - violin, is common. It has a sweet, dense taste, which is very rich, and when baked the crust softens so much that it can even be eaten.

Chestnut, which is most often consumed in Bulgaria, has a white rind, is extremely fragrant. It has a thick sweet taste and is extremely high in pectin and vitamin C. In Bulgarian folk medicine it is used to treat almost everything - from mental disorders, to heart problems.

Sweet dumping is not common in Bulgaria. This is a small pumpkin with a pale rind of green stripes. Its taste is suitable for combining with both sweet and salty. It is often used in English cuisine and French cuisine.

An extremely tasty variety of pumpkin is Baby Boo. They are a variety of the sugar pie known from American movies, characterized by their poisonous orange color. Baby boos are very small variety of pumpkin, with pale skin and flesh. They are very sweet and rich in vitamin A and B.

The Crown Prince variety is already found in Bulgaria. It is a variety of white pumpkin, but the peel is gray, even to blue. These pumpkins have a firm, dense flesh, excellent for roasting and for pies.

Another variety of chestnut is Buttercup. It has a green rind and orange flesh, which is sweet.
