Pumpkin adds fiber to your diet and is a rich source of vitamin A. Naturally, the low calorie content of pumpkin, which contains only traces of sodium and fat and is cholesterol-free, makes it an excellent choice for a healthy diet.

Unfortunately, we can't say the same about pumpkin pie with whipped cream! But fortunately, we can use pumpkin in many other delicious and healthy dishes.

Choosing high quality pumpkins is very important. They must be mature, with a rich, orange color and hard bark. Avoid cracked, rotten or too whitish pumpkins, they spoil faster and cannot be stored effectively.

Store whole, ripe pumpkins for several months in a dry, ventilated place with a temperature of 20 to 23 degrees, with a relative humidity of 60% to 75%. Arrange the pumpkins carefully to avoid damage to the pavement, which will lead to rot and reduce the shelf life.

Arrange the pumpkins at a distance from each other, away from walls and windows where condensation often occurs. For longer storage, freezing or canning pumpkin can allow you to use it in food all year round.

Although pumpkins will last on the shelf for several months, if stored properly, other storage methods will need to be used if you want to keep them for longer:

• Freezing is the easiest way to keep extra pumpkin, and it gives the best quality of the product. An added benefit is that you can freeze the pumpkin puree needed for your favorite recipes. Thaw in the fridge, and you're ready to make your own pumpkin pie or favorite pumpkin recipe!

• If you do not have enough space in the freezer, cut the pumpkin into cubes and boil it, then put it in jars, which you add to the remaining liquid from the cooking. You can also make boiled pumpkin puree, which you can still fill in jars.

Once you have done this task, boil the jars for about 10 minutes and after cooling arrange in the basement. Due to the low acidity of the pumpkin, cooking for preservation is mandatory!
