Tutmanik is a kind of cake. It looks more like a cheese pie, with the small difference that the pie is made with precise crusts, and tutmanikat with dough. That is why it is said to look like a cheesecake. It, as well as the pie, are one of the most preferred dishes for a real festive table in Bulgarian.
Tutmanik can be consumed for breakfast, lunch and dinner, as well as pie. In combination with kefir or yogurt it becomes even tastier.

The ingredients you will need for the dough are one kilogram of flour, one egg, a cube of yeast or baking soda, at your discretion, and savory or colored salt. Knead the ingredients until you get a soft dough. Leave it for thirty minutes at room temperature to rise.
For the stuffing of tutmanika you will need about three hundred grams of cheese, three eggs and three tablespoons of yogurt. Mix them carefully in a larger bowl.
Once the dough has risen, break it into small balls and carefully roll them one by one in the cheese mixture.
Grease the baking tray and arrange them. You can break a yolk to spread on top to get a nice tan. If not, instead of egg yolk, spread with a mixture of melted butter and savory or colored salt, depending on what you put in the dough. Bake in the oven for about thirty minutes at two hundred degrees.
If the balls are too boring for you, you can choose different shapes in which to make tutmanika and arrange in the tray. So your tutmanik will be a little different and attractive.
And finally, to summarize what we need:
- 1 kg. flour;
- a cube of yeast;
- 4 eggs;
- a pinch or two of colored salt;
- cheese;
- a spoonful of yogurt.
