Fermented beet yeast is an alternative and effective way to consume valuable nutrients, but unlike raw beets, yeast contains much less sugar.

But in our hectic daily lives, we rarely have enough time and energy left to ensure his presence at the table all the time. And keep in mind that red beets are present all year round in our markets, but we think about it mostly in the autumn-winter period.

That is why I offer you an easy recipe, with which, taking very little time once a month or two, you will get a large amount of such a useful drink for every day of the year.

Beets are rich in fiber, have a beneficial effect on intestinal function, are used in the treatment of constipation.

How to make beet yeast?

Required ingredients:

1 kg of raw red beet roots

Spring, mineral or filtered water - about 2 liters

1 tsp yogurt nail *

2-3 tbsp. sea salt or Himalayan salt (your preference)

Fresh ginger root - about 2 tbsp. (grated)

2-3 larger cloves of garlic

* Zwick is easy to prepare: Put in a colander or a sieve a large piece of cheesecloth, put it on a bowl and pour into the cheesecloth a jar of homemade yogurt. Leave overnight. The nail is the liquid that has separated in the bowl. Use the milk strained in cheesecloth for salad.

** If you want to make more yeast, just use a larger container and increase the proportions of the ingredients to the container. For example, I usually use an 11-liter container, about 3 kg of beets, about 6 liters of water, two large heads of garlic, more salt (to taste), about 300 ml of zwick and a large ginger root.

Method of preparation:

Wash well and peel the beets to avoid pesticide residues as well as the ingress of sand from the soil. After peeling, wash it again. Also be careful with tap water - first, it should be boiled and cooled and only then add it to the beets. Therefore, it is best to use filtered or spring water. Maybe mineral.

You will also need a large jar (at least 3 liters) to hold the beets and liquids.

First, cut the beets into large pieces, place it in the jar until it fills 1/3 of the jar. Then add the zwick, water and salt. Leave a small space between the top of the liquid and the neck of the jar, about 2 fingers, and shake the jar to dissolve the salt. Finally, add the grated ginger (or cut it into thin strips with a peeler) and the peeled and sliced garlic cloves.

Keep the jar at room temperature and open the lid every day to release the gases formed during fermentation. You can also use cheesecloth instead of a lid, attached with an elastic band to the neck of the jar.

You should shake the jar every day or stir the contents with a wooden spoon. The fermentation process lasts from seven days to two weeks, depending on the room temperature. Mold or mildew may appear in the container, but in this case simply open the jar and clean it with a wooden spoon (regular opening and shaking of the jar should not happen).

You can try the taste of yeast every day to check if the beets have already fermented. If you consider, you can add extra salt to taste. The appearance of carbonated bubbles is a sign that the yeast is ready and then you can strain and transfer the liquid into bottles in the refrigerator and start consuming the drink.

Once your beet yeast is ready, you can now include it in your daily diet.

The options are many. You can drink the drink every day. Beetroot pieces can be used sliced or grated for salads or added to other dishes (soups, borscht, stews, etc.).

Beets have a sour taste, reminiscent of sauerkraut or pickles, but have a denser texture.

If you want to use the beets only for a drink, you can fill the jar with water for a second fermentation.
