The bread is the daily food that is present at the table of the Bulgarian. To prepare fluffy bread on strings, you need to follow some rules in the technology for the preparation of the dough.
The dough, in turn, is a homogeneous mixture of flour, a small amount of water, fresh yogurt, salt, yeast, fat and eggs, depending on what you want to cook - bread, bread, bread, Easter cake. The cooking time of the final product is different, because the preparation of Easter cake (for example) requires more fermentation due to the presence of more sugar in it. And the other question that arises is:
How to prepare the dough on threads?
The basic rules for preparing such a dough are the following:
1. The flour and eggs should be at room temperature and the liquid ingredients should be slightly warmed;
2. To make sure that your yeast is fresh and high quality, you must prepare in advance a leaven of slightly warmed water or milk, dissolve in it 1 tbsp. sugar and the amount of yeast you will use, and two or three tablespoons of flour. Mix all this into a homogeneous mixture and allow the mixture to activate, that is - to rise, foam;
3. In the bowl in which you will knead the bread, sift the required amount of flour and add salt, stir. Then add the beaten eggs with a fork, if any in the recipe, some of the melted or slightly warmed fat, the liquid ingredients and the fermented yeast;
4. This is where the real kneading began. At first, while possible, mix the mixture with a spatula, and then start kneading with your hands. Take a little of the flour to get a smooth and elastic dough, it should be soft;
5. It's time to add the remaining fat - and here, at this stage of kneading the threads will form in your homemade bread. You do not need to beat the dough on the counter! Roll out and fold the dough, spreading a little of the fat - and so on until the fat runs out;
6. Insert the dough in an oiled dish with a lid or simply covered with stretch film and a clean towel. Place the dish in a warm place until it doubles or triples (in some recipes). It is enough for the room to have a temperature of 20 to 25 degrees;

7. Divide the dough into the parts you need. Stretch them with your hands in wicks and twist slightly, then shape your bread the way you decided.
8. Leave the shaped bread again to rise for no more than 30-40 minutes. Then spread, if prescribed, with beaten egg or fat. Bake your bread in a preheated oven at the degrees indicated in the recipe. Check the readiness of your bread with a wooden stick, if stuck in the bread, it comes out dry, it means that your bread is ready.
These are the basic rules for making thread dough. If you follow them, you will enjoy a really fluffy and delicious bread on strings.
