From its very name it is clear that this dough is obtained by steaming the dough. The technology for its preparation is not complicated, but it must be followed in order to get it well. The steamed dough becomes fluffy and subsequently manages to swell precisely because of the steam that is obtained during its preparation.

Where the steamed dough comes from is not very clear, as both the Italians and the French take credit for inventing it.

What do you need to make steamed dough?

In addition to flour, you also need salt, eggs, water and butter.

How is steamed dough prepared?

Prepare a large saucepan in which you need to put oil (4 tablespoons), water (1 teaspoon), very little salt. These products are put on the stove and wait for them to boil (the oil must melt), then remove from the heat. Continue stirring the mixture until a homogeneous mixture is obtained without any lumps. Return the pan to the hob, but it should be less heated, continue to stir and be careful, because the mixture should not become sticky.

Remove the pan from the heat and place the dough in a bowl. Allow the dough to cool for about 5 minutes and start adding the four eggs one by one, stirring constantly.

It is mandatory to add the eggs one by one - with each added egg, mix well until the dough is uniform, only then can you put the next egg. The dough should become smooth.

Once you add the eggs, it is ready and you can start the more interesting part of the preparation - from the steamed dough you can make many different desserts, you can also use salty filling, it can be both fried and and baked.

Eclairs, tumulus and various pastes are most often prepared from steamed dough.
