And if you have fresh potatoes, eat them with the peel. With them it is very gentle and thin, so you will not feel it after heat treatment. And fresh spring potatoes, in addition, contain a significantly higher amount of vitamin C.
However, it should be noted that over time, the levels of vitamins in potatoes decrease. When stored for a long time at temperatures above 10 degrees, the vitamins in potatoes decrease. In other words, there are more of them in the fresh ones than in the old ones.
