It is mandatory to sift the flour if you want the pie to be porous and fluffy. Add salt and yeast. You can make the pie without yeast, but it will not swell enough and will remain flatter.

But if you like this type of pie, do not use yeast or baking powder. The most basic pie dough is made with warm water. Add enough water to make an elastic dough that peels off the hands.

In order to bake the pie evenly, it must be well kneaded. Knead the dough for a long time, and if you used yeast, let it rise for about an hour and a half. To make the dough elastic, stretch it, fold it and repeat the procedure a dozen times.

Only after it becomes elastic enough is it left alone in a warm place to swell. Beat the dough in the middle with your fist to expel the excess air and shape the pie.

To bake the pie well, bake it in a preheated oven at 230 degrees. The pie is baked for about forty minutes. If you see that the top is starting to burn, cover the pie with foil to bake evenly.

You can tell if the pie is burnt if you pierce it with a toothpick. If no dough sticks to it, the pie is ready. You can find out if you take the pie out of the tray and tap on the bottom.

If it is ready, a hollow sound should be heard. You can then return the pie to the oven for a few minutes, turning it upside down to make the bottom crispy.

To bake the pie well, do not open the oven door for the first twenty minutes. If you like a pie that has a soft crust, cover it with a damp cloth immediately after removing it.
