In his experiments, Gary Miller used beetroot juice, spinach and lettuce to make breakfast for eight people over the age of 70. After drinking half a liter of juice, their blood nitrate levels tripled.
At the same time, 8 other volunteers ate nitrate-poor foods. Finally, Miller examined them with a magnetic resonance imaging scan, which showed the oxygen content in the blood in various parts of the brain.
The group, which ate a lot of fruits and vegetables rich in nystrates, had better brain drainage.
Miller then decided to change the diet of the two groups, and again those who took nitrates recorded better results.
According to him, the results show that nitrates can maintain mental abilities even with age.
