Like most foods, cakes are at their peak of quality when fresh. This means that serving them on the day they are baked is always the best option.
But sometimes you have no choice but to bake (or buy) a cake in advance. Or maybe you have leftover cake that you can't finish on the first day. Either way, you need to know how to store it to make sure it stays fresh for as long as possible.
Do not store the cake in the refrigerator
The first and most important piece of advice that can be offered to you is that when it comes to cakes, the refrigerator is not your friend. If you are used to working as if everything stored in the refrigerator will automatically last longer, this idea may play a bad joke on you. The fact is that cake stored in the refrigerator, you can actually lose your good looks and taste faster.
This is due to the way the starch molecules in the flour absorb water when the dough is baked, and then, as soon as the cake starts to cool, these molecules recrystallize or harden, pushing the water out and onto the surface of the cake, where evaporates.
In short, cooling the cake causes this process significantly faster than at room temperature. So, don't chill your cakes.
This applies to bread and all other pastries - they all stagnate faster in the refrigerator.
Store the cake for 1 to 3 days
If you plan to eat your cake within three days of it being baked, the best thing to do is keep it at room temperature. This means on the countertop, away from heat and out of direct sunlight. If your cake is in a box and you plan to eat it within 24 hours, this is all you really need to do.
If you plan to keep your cake longer than that, you can leave it in the box and wrap it with plastic wrap, which will keep the cake from drying for up to three days.
If your cake is not in a box, an acrylic cake lid will be useful. It's just a hard, transparent dome with a handle that goes over the cake. Just place your cake on a plate, cover it with a lid and store it on the counter for up to three days. You can put a kitchen towel over the dome to keep the sunlight away from it.
Another great option is the plastic container for cake storage, which consists of two parts, consisting of a tray on which the cake is placed, and a domed top, creating an airtight seal. They are also great for transporting cakes.
How to freeze cakes?
If I have to store the cake its for more than three days, you can freeze it. Unlike storing it in the refrigerator, freezing the cake in fact, it's a great way to keep it fresh, especially for longer periods.
If your cake is in a bakery box, just wrap the box in two layers of plastic wrap and store it in the freezer just like that.
When you are ready to serve, just take the cake out of the freezer and let it thaw on the counter. Thawed cake may look slightly unsightly, but overall the cake will be better than if you chill it or leave it on the counter for more than three days.
If you have baked cake tops and want to put them away a few days before decorating, the freezer is perfect. Just cool the individual layers, then wrap them twice in plastic wrap and store them in the freezer, where they will last for several weeks to two or three months.
When you are ready to thaw and decorate, remove the countertops from the freezer and let them thaw on the hob, still in its package for 20 to 30 minutes. In fact, freezing countertops like this, even overnight, makes decorating them much easier.
