The main ingredient of the tabula is parsley. In addition to the usual spices, it is typical to use zaater - fresh leaves of a savory-like plant. Salads must mix different flavors, such as lemon and tomato.
Another widely popular Lebanese appetizer is hummus. He stayed overnight in water chickpeas, which is boiled, then strained, until a fine mixture. It is seasoned with salt, lemon, sesame tahini and served with olive oil.
Eggplant is also quite popular in Lebanon. Mutabal is prepared from it - an appetizer reminiscent of our kyopoolu. There, however, it is prepared only from eggplant flavored with lemon and sesame tahini and lemon. Another popular appetizer with vegetables is baba ganush - eggplant salad, fresh tomatoes, peppers and a little garlic.
Appetizers in Lebanese cuisine are mostly prepared from vegetables. For example, lettuce there is called hash. They are huge, tender and delicious. Of these, only the core is used, which is characterized by great taste.
Other popular Lebanese appetizers are pickles. They are called macdus. The name comes from an amazing appetizer made from mini aubergines, slightly dissolved and stuffed with a mixture of walnuts, ground red peppers and garlic. Arrange them in a jar and pour pure olive oil. They are ready for consumption in a month.
Tabbouleh salad
Necessary products: 250 g (1 tsp) bulgur, 3-4 tomatoes, 1-2 cucumbers, 3 green onions, 2 bunches of parsley, 1 bunch of mint, juice of 1-2 lemons, 5-6 tbsp.. olive oil, salt, ground black pepper.
Method of preparation: The bulgur is boiled according to the instructions. Cool and pour into a large bowl. Tomatoes are cleaned of seeds. Together with the peeled cucumbers, cut into cubes. Parsley and mint are finely chopped.
The products are added to the bulgur. Season the salad with lemon juice, olive oil and stir. Sprinkle with salt and pepper and refrigerate for 30 minutes, then serve.
