Every Bulgarian knows what is meant by the word "appetizer", but hardly suspects that this concept is Lebanese and has almost nothing to do with what we imagine - sliced meat delicacies or cheeses.
In Lebanon, the home of appetizers, these are usually any salads or small portions of meat served with different sauces.
The idea is for them to be shared by all diners and often become a main dish. They are served in common plates, from which everyone takes after pronouncing the name of Allah, to whom all natural gifts should be thanked.
In connection with all that has been said so far, it is good to surprise your guests by serving them the typical Lebanese appetizers. Here are some of them:
1. Falafel
Everyone has heard of these amazing vegetarian meatballs, which are made from chickpeas and a variety of spices that make them truly irresistible.
It is not clear exactly what their homeland is, as they have been consumed throughout the Arab world since time immemorial. According to most sources, they are from Egypt, but they quickly managed to spread not only in the Arab countries, but all over the world.
2. Fatush
It is a type of salad made from finely chopped vegetables, to which pieces of fried bread are added.
3. Tables
The roots of this bulgur salad can be traced back to the 7th century, when it was especially popular in the Mediterranean. It is supposed to originate from Syria, but is among the traditionally prepared Lebanese appetizers.
4. Baba ganush
This is an eggplant salad and means "sweet and seductive". Although this is mainly due to its excellent taste, in Palestine and Syria they believe that even girls can be seduced by this salad.
5. Hummus
Traditional chickpea puree, which can be found everywhere in the Arab countries except in the Maghreb and its environs.
6. Kibe
They are small meatballs of bulgur, minced meat and spices. It is the duty of every housewife to be able to prepare them and this is how her culinary skills are assessed.
7. Laban maa ijiar
This is a milk sauce invented by the Bedouins, which is traditionally served as a Lebanese appetizer. It is similar to our Snow White salad, but it must be served with mint sprigs.
