Our southeastern neighbor Turkey is proud of its rich tradition of preparing appetizers. It is typical to celebrate the big holidays in Turkey to share the table in the company of friends and relatives both at home and in restaurants - in fact, these traditions are well known to us, as they have long become common in the Balkans.
The word "appetizer" comes from the Persian language and means breakfast. Many of the foods we still call appetizers are also of Persian origin and have reached the places where the Ottoman Empire stretched. That is, the cuisine we are proud of was brought to us by the Turks.
When we talk about Turkish appetizers, we can not fail to note the obvious similarity they have with our, typically Bulgarian snacks. In Turkey, for example, white cheese is a major part of the appetizer.
Varieties of kyopooluto and other vegetable salads are often served as a free appetizer, with some restaurants giving it a try before ordering. Hot peppers, pickles, vine sarma are a must.
Among the traditional appetizers of our southern neighbor, marinated mackerel occupies a prominent place, the so-called gadget, which is essentially grated cucumber with strained yogurt and garlic (similar to our milk salad and Greek tzatziki).
Another popular variety of jajika is ali nazika, which is strained yogurt with roasted eggplant and garlic.
Also highly valued are the plates of cold but pre-cooked or fried vegetables, as well as breaded mussels, squid in sauce, tomato and cucumber salad, tarama caviar.
Another typical example of a Turkish appetizer is imambayalda - one of the most popular vegetable appetizers, which can replace even a main dish in Turkish cuisine.
One of the favorite appetizers of the Turks, which combines their traditional brandy, called "crayfish" or "lion's milk", is Esme with pomegranate sauce.
The contents of this spicy snack include roasted red peppers, tomatoes, onions, walnuts, parsley, an enviable amount of garlic and pomegranate sauce.
