When choosing plums to dry, you should choose only fully ripe fruits. If you accidentally get rotten, crushed, green or eaten fruit, throw it away.

Plums are easiest to dry by leaving in the sun. They are placed on a newspaper or other paper and left for about a week to 10 days in sunlight. They should be dried until, when squeezed, the fruit forms a ball that is firm enough.

The dried fruits are inspected again and, if necessary, cleaned of rotten or blackened plums. They are packed in hemp or paper bags in which they are stored for a long time.

If you want to cook prunes faster, you can also use the oven. Arrange the fruit in a pan and put them for 9 hours in an oven preheated to 50 degrees.

Then raise the temperature by 10 degrees and leave them for another 9 hours. Remove the semi-finished prunes and leave them to stand overnight at room temperature, then dry them again for 9 hours, but at 70-80 degrees.
