Mexican cuisine, known for the widespread use of products such as beans, corn, chili peppers, all kinds of fruits and vegetables, skillfully combined with aromatic spices, is among the most common not only in America but throughout Europe.
There is hardly a person who has not tried or at least heard of the Tex-Mex cuisine, the various Mexican fish specialties, the traditional guacamole and especially the breads known as tortillas. The latter have become emblematic of Mexican cuisine, and among them are especially preferred the so-called. kesadias.
Quesadillas are tortillas with a bread-like taste that are stuffed with cheese and fried sausage with eggs. It was then that they received the name quesadias. Their preparation with corn flour is more popular, but in the northern parts of the country unrefined wheat flour is preferred.
The filling is easy to prepare, as are the tortilla cakes themselves, so you can easily learn how to make quesadilla at home. Here is the traditional recipe for making quesadias, and if you do not have corn flour, you can easily replace it with wheat.
Necessary products: 500 g corn flour, 1 tsp. salt, 3 tbsp. oil, 3 tbsp. butter, 130 ml of water, 250 g of cheese, 150 g of sausage, 1 onion, 5 eggs
Method of preparation: In a bowl, mix the flour and butter and gradually start adding water until you get an elastic dough. The water is about 130 ml, but if necessary, you can add more. The goal is to have an easy to model dough. Leave it to stand covered with foil for 30-40 minutes.
Then divide it into 20 small balls as big as an apricot. Each ball is rolled out until a nice and thin round loaf with a diameter of about 8 cm is formed. The loaves prepared in this way are baked on both sides on a grill or grill pan and in half of them a slice of cheese is placed, after which they are folded.
Separately, fry the diced sausage and sliced onion in the oil, and after they soften, add the eggs to them. Fill the remaining loaves with the mixture prepared in this way and also fold them in half.
All kesadias put back on a heated grill pan to bake on both sides, and are ready to serve. If desired, you can pour them on top with tomato sauce.
