1. Choose your type of lens
The lens is a high-protein, high-fiber product that cooks quickly and does not require pre-soaking like other grains. 2. Clean and wash the lens
Before you start, the lens should be sorted and rinsed. Spread the lentils on a flat surface (baking paper works well) so that all the grains are visible. Remove all stones, dirt, damaged lenses or other debris.
Place the cleaned lentils in a colander or bowl and rinse well with lukewarm water to remove any fine particles. If the holes in your colander are too large to hold the lens, a small bowl will do the trick. Just fill the bowl with water, shake the lentils and then carefully pour in as much water as possible. Repeat two to three times.
3. Boil the lentils
For each glass of lentils that are prepared, use one and a half glasses of water. Put the water in the pot without the lentils. Wait for it to boil and then add the sorted and washed lenses. Bring the mixture to a boil again, then reduce the heat to low, place a lid on top and simmer for 20 minutes.
If desired, herbs and spices can be added to the water for extra flavor. Salt should not be added as this may prevent the lens from softening.
4. Test the texture of the lens

After twenty minutes, use a fork to remove a few lenses from the boiling water. Try it the lensto test the texture. The lens should be tender and somewhat firm, but not crispy.
