Sweet potato croquettes
Necessary products: 600 g pre-peeled potatoes, 3 tablespoons oil, 6 eggs, 4 tablespoons flour, 120 sliced almonds, salt and sugar to taste, a packet of vanilla
Method of preparation: Cut the potatoes into cubes and cook for about 15 minutes, then bake in the oven for 5 minutes. Put in a bowl, add butter, vanilla, salt and sugar to taste and mix everything. Put the puree on the stove, stir to dry slightly, and add 3 egg yolks. Stir again. From this mixture croquettes are formed, which are rolled in flour, in 3 beaten eggs and in sliced almonds. Fry in fat for about 3 minutes and are ready to serve.
Potato donuts
Necessary products: 500 g peeled and boiled potatoes, 14 g dry yeast, 1 1/2 tsp milk, 100 g sugar, 125 ml oil, 2 eggs, 1 kg flour, 150 g powdered sugar, salt to taste.
Method of preparation: Mashed potatoes. In a bowl, dissolve the yeast together with 120 ml of water and add the mashed potatoes, sugar, milk, oil, eggs and salt to taste. Mix well and carefully add the flour again, stirring. The resulting dough is left to rise covered for about 2 hours, then rolled out into a crust. Cut into circles and fry in a deep fryer. When they are ready, sprinkle with powdered sugar.
Potato cake
Necessary products: 350 g boiled potatoes, 220 g sugar, 9 eggs, 150 g ground almonds, 3 tablespoons starch, 1 vanilla, powdered sugar for sprinkling
Method of preparation: The potatoes are mashed and added to the beaten egg yolks, almonds, vanilla and potato starch. Finally, add the whipped egg whites and knead the dough. It is poured into a greased form and baked for about 1 hour in a preheated oven at 180 degrees. The cake prepared in this way is left to cool and sprinkled with powdered sugar.
