Spread the cake with egg yolk mixed with a tablespoon of water. Bake in a preheated 200 degree oven on the lowest level. When the top of the cake turns red, open the oven door slightly and cover the cake with foil. Reduce the temperature to 180 degrees and bake until done.
During baking, the cake should not be touched and moved, the oven door should not be opened unnecessarily so that the cake does not fall.
Once the loaf is ready, the oven is switched off, the door is opened slightly and the loaf is allowed to cool in the oven. Once it has cooled, it is moved to a large plate on which a cotton cloth is placed so as not to moisten the bottom of the cake.
The cake is greased with butter or sweetened water. Cover with paper towels and wrap with a towel. He is allowed to rest overnight.
