In our country, as in most countries around the world, the walkie-talkie comes from the famous Chinese cuisine. It is a deep, round pan with a small diameter at the bottom, which allows you to fry in it with little fat and over high heat.

Its depth allows easy mixing of the products and their transfer to different temperature zones. If it has an arched lid, it turns it into a multifunctional pot in which it can be boiled and stewed.

The wok dish is also very convenient for deep frying, as its wide upper part provides free evaporation, and its volume allows the preparation of all food at once.

Liver in Chinese

150-200 g of pork liver (if beef, peel the skin); 2 carrots; 1 onion; 1 small zucchini; 2 hot peppers (or 1 large); stalks and leaves of red beets (2-3 cabbage leaves); 1 tbsp. white mustard (mustard) and sesame seeds; oil; 1 tbsp. dark soy sauce; 1 tbsp. mastic; ginger powder.

Method of preparation:

The liver is cut into medium pieces, removing the veins. Marinate in the mastic and half the soy sauce for at least half an hour, stirring occasionally.

During this time, peel and cut the vegetables - carrots into circles, zucchini - into crescents, onions - into rings, and leave separately.

Heat oil in a wok until clogged. The liver is poured in the middle of it. Turn 2-3 times to turn white, then push to the walls of the pan. Put the carrots in the middle for half a minute, then mix the products.

Then again push the lightly fried meat and carrots aside, and in the middle put the onion with the zucchini for 1 minute.

Turn with a spatula from the bottom up several times and mix with the liver and carrots. The stalks and leaves of the beets are cut, and put back in the middle. Sprinkle with seeds and ginger on top. Stir for half a minute. Add the chopped pepper - to soften.

Finally, everything is mixed. Remove from the heat and season with the remaining soy sauce. Do not add extra salt.
