In Russian cuisine, red beets are extremely popular and are used to make all kinds of soups, salads and appetizers.

Borsch with yogurt

Method of preparation: Peeled potatoes are boiled in salted water and when ready they are rubbed together with the broth. Finely chopped red beets, cabbage, carrots and onions put in a saucepan with tomato paste, sugar, salt, potato mixture and a little water and stew for about 25-30 minutes.

When everything is ready, add enough water to make the dish look like soup and add lemon juice and oil, parsley or dill. 1-2 spoons of yoghurt are added to the prepared borsch poured into bowls.

Red beets with cream

Necessary products: 500 g red beets, 1 carrot, 1 cup sour cream, 1 tablespoon lemon juice, 1-2 tablespoons flour, 50 g butter, salt and sugar to taste.

Preparation: Cut the beets and carrots into strips, sprinkle with lemon juice, add a little oil and water and simmer for about 40-50 minutes, stirring occasionally.

In a separate bowl, fry the flour with butter, add the cream, sugar and salt and boil everything for no more than 1-2 minutes. Pour the sauce thus obtained over the already prepared vegetables.

Red beets with apples

Necessary products: 500 g beets, 50 g smoked bacon, 1-2 green apples, 1 glass of red wine, 1 glass of fruit juice, cinnamon, cloves, salt and sugar to taste.

Preparation: Peel the apples and beets and grate them in bulk. Melt the bacon and add the grated products and all spices without the wine.

It is finally applied after everything has softened enough. The dish thus obtained is most often served in combination with meat products.
