In the season of cans and jars of winter food, we thought about where everything started, related to the closing of our favorite jars for the winter.

One of the classics in the Bulgarian reality in the cold evenings is to open a home-made jar with pickled peppers, pickles or lyutenitsa. Not to mention the compotes - they are a dessert, part of the morning or afternoon breakfast with fried slices, mekis and other similar delicacies that do not spare the waist.

In addition, compotes are often an integral part in the preparation of various cakes, cupcakes and pies. The compote juice is ideal for syruping cake trays.

There is no dispute - canned vegetables and fruits remind us of summer, and what is cooked at home is always tastier than ready-made. We are used to thinking that jars of winter food are a typical Bulgarian invention. But the technology was created by the Frenchman Nicolas Aper in 1795.

Then he wins an award for the best way to keep products for a long time. The Frenchman was awarded the title of "Benefactor of Mankind" and received a gold medal for his technology. And it is very simple - he filled metal cylinders with meat and broth, others - with jam.

He then closed them with lids and boiled them for hours. After eight months, their taste was excellent. This happened because the high temperature killed the microbes that are "responsible" for breaking down food.
