Potatoes, which for a long time were underestimated in China and considered a food for the poor and a culture for underdeveloped areas, began to be presented as an important part of the Chinese daily menu.

However, behind this change is the fact that China is struggling with water shortages and is trying to find substitutes for traditional crops that need abundant irrigation, world media reported.

Potatoes have not only become an indispensable part of the local table, but are also an increasingly produced food product. In fact, China boasts a producer of 95 million tons of potatoes a year. In addition, the country intends to increase the amount of its potatoes in the next five years.

Chinese Agriculture Minister Han Changfu also pointed out that the potato industry is already being taken more seriously, as it has highlighted the country's modern agriculture and made the menu of local people more diverse.

In the capital of the People's Republic of China, a serious promotion of potatoes as a staple food and especially as an equivalent of cereals has started.

The reason is that the North China Plain is experiencing difficulties due to the increased use of water by industry, as well as due to the cultivation of crops such as wheat. In fact, in some areas, the cultivation of wheat was no longer even allowed to preserve groundwater.

According to some experts, potatoes will really help China. Because thanks to them the country will be able to improve the sustainability of its agriculture. These and other views were presented during the World Potato Congress, which took place in Yanking, a suburb of Beijing.

Not far from the center of the capital there is already a potato museum and a center for potato production. But the entrance to the Potato Museum shows a curious sign calling on small potatoes to stand up and become a staple food to ensure the safety of agriculture.
